Recipe: Baked Chicken Tacos

Here’s a simple, 3-step recipe to try out this Taco Tuesday! Coach Anna is sharing a favorite dish that can be fun to make with the whole family plus super versatile to add all sorts of fun ingredients too!

Ingredients:

Diced Green Chile Peppers (8 oz)

Jumbo Taco Shells (2-24 count boxes)

Simple Green Organic Chili Beans (2-15 oz cans)

24 oz of chicken

Cilantro

Mexican Blend Cheese

BBQ Sauce

Onion Powder

Garlic Powder

Chili/ Paprika Powder

Instructions:

Step 1: Bake chicken at 400 degrees F for 40 minutes. Take the chicken out and shred or cut into small pieces. Use a large skillet to mix in the onion powder, paprika, garlic powder, BBQ sauce, and a little bit of salt. To save time, you can also crockpot the chicken with above seasonings so it is soft and ready to shred by lunch or dinner time.

Step 2: Set up the baking pan with taco shells so that they are standing upright as much as possible. Add the chicken into the taco shells so that they make up about 1/3 to a ½ of the taco. Add the chili beans, green chile, and anything else that you would like to be baked.

Step 3: Add the Mexican Blend cheese on top and put back into the oven (it should have cooled down to about 350 degrees). Tacos only need to be in the oven for about 5-10 minutes- only until the cheese is blended. Take out of the oven, top with cilantro, lettuce and tomato, and serve!!!
